Roberta’s Pasta al Vino - Wine sauce "Penne" Pasta

Ingredients for 2 people “… hearty eater”… ;-)

  • 200 gr of Penne or Pennone pasta
  • 1 red onion, preferably fresh and sweet
  • 2 cloves of garlic
  • 1 bottle of Bolgheri red wine doc
  • vegetable broth
  • salt, pepper, extra virgin olive oil
  • and chilli pepper if you like!
  • fresh parsley

Chop onion and garlic.

In a pan put: a little extra virgin olive oil, onion, garlic, chilli pepper.
Brown everything for a few minutes.

Add a glass of wine, pasta and some vegetable (homemade!!!) broth.

Continue cooking and add wine and broth in equal parts as needed,
… cook the pasta "al dente"!!!

When at the end of cooking the pasta will be creamy and ready for serving. Just add a sprinkling of parsley (if you want!!!).
