Roberta’s Pork Fillet with Brandy and Brandy Sour - recipes and offer

Ingredients (4 People)

  • 600/700gr (1.3/1.5lb) Pork Fillet;
  • salt, pepper, Extra Virgin Olive Oil;
  • Chopped Pistachios;
  • 1 Glass Brandy.

Recipe

  • Salt, pepper and oil the fillet;
  • Batter the fillet with the chopped (just chopped, possibly)pistachios;
  • Lay the fillet in a preheated pan with EVOO;
  • Brown over medium heat, turning the fillet now and then;
  • When the fillet has a nice golden colour, gently add the brandy (medium heat);
  • Let the alcohol evaporate for 30 seconds, cook (low heat) for 15 more minutes;
  • Serve on a chopping board slicing in 1cm slices and dressing with the brandy / pistachio sauce from the pan.
