Marco's Zuppa Lombarda - Lombardy Soup - the recipe

The Ingredients

  • beans (soaked for 12 hours)
  • home made bread (and when I say home made, I mean it!)
  • garlic
  • rosemary
  • blonde onion
  • salt
  • pepper
  • Extra-virgin olive oil - evoo

How to

  • Cook the beans with poached garlic and rosemary
  • Slice the onion
  • Fry the onion in EVOO with a pinch of salt
  • Slice and grill the bread
  • Set up for Serving
  • Place the beans and the onion on the bread. You could want to add a bit of cooking water from the beans. Add salt, pepper and - Tuscan! - EVOO at will
  • Buon appetito!!!
