Marco's Zuppa Lombarda - Lombardy Soup - the recipe
The Ingredients
- beans (soaked for 12 hours)
- home made bread (and when I say home made, I mean it!)
- garlic
- rosemary
- blonde onion
- salt
- pepper
- Extra-virgin olive oil - evoo
How to
- Cook the beans with poached garlic and rosemary
- Slice the onion
- Fry the onion in EVOO with a pinch of salt
- Slice and grill the bread
- Set up for Serving
- Place the beans and the onion on the bread. You could want to add a bit of cooking water from the beans. Add salt, pepper and - Tuscan! - EVOO at will
- Buon appetito!!!
